1. Peel sweet potato, remove ends & cut in half
2. Remove ends from white potatoes
3. Using a mandolin slice all potatoes into thin rounds
4. Soak potatoes in water for 5 minutes to remove excess starch
5. While potatoes are soaking, grate Parmigiano- Reggiano and set aside
6. Place potatoes on clean towel and pat dry
7. Transfer potatoes to baking sheet. Brush with olive oil and sprinkle with salt and pepper
8. Bake at 400 until golden brown- approximately 30-40 minutes, flipping halfway through
9. Sprinkle cheese over potatoes and bake for an additional 5 minutes
10. Sprinkle remainder of cheese over potatoes and enjoy!
